The arrowhead is a tuberous vegetable from China which is only available during Chinese New Year as it's a seasonal crop. It's also known as Chinese potato because it tastes like potato when cooked with chicken.
The arrowhead was cleaned, peeled and sliced as shown in the above photo. Then soak the arrowhead slices in the water before frying. Transfer them to a tray to strain the water.
Dip the arrowhead slices into a wok with hot boiling oil. Stir for a few minutes.
Scoop the arrowhead slices before they turn brown. Add some seasoning which you like such as salt, sugar or pepper. The crunchy arrowhead chips can be served when they are getting cool.

Ngaku Chips is my favorit... better than anything else... including potato chips.. but because its only occur in chinese new year event... so... no choice lah.. :)
